・We use scallops harvested during the peak season of April to July in the nutrient-rich waters of Mutsu Bay, Aomori. Unlike the common steaming method, we employ a specialized "boiling method" that slowly cooks the scallops in hot water, firmly locking in their natural sweetness and umami flavor.

・We utilize the latest "Alcohol Brine Freezing (Liquid Freezing)" technology, rapidly freezing the product in liquid alcohol at -30°C or below. This method freezes the scallops significantly faster than air freezing, preventing cellular damage. As a result, there is minimal drip (loss of umami) upon thawing, allowing you to enjoy the fresh, plump texture and rich flavor just as if they were freshly caught.

・This product is manufactured in a seafood processing facility certified by both "EU HACCP" (European hygiene standards) and "US HACCP," known for their particularly strict hygiene management controls. In addition to these world-class safety standards, this product is also Halal certified by the Nippon Asia Halal Association.

・Inside our factory, skilled staff carefully remove the "uro" (mid-gut gland) from each scallop by hand, eliminating concerns regarding shellfish toxins. We further ensure safety through rigorous X-ray inspections and metal detection. The only ingredients are "scallops" and "salt"; no preservatives or other additives are used.
